We head into Galvin at The Athenaeum’s kitchen to find out more about our new Head Chef, Ian Howard.

50ml Lemon Juice
25ml Tarquins Gin
15ml Lavender Syrup
2 dashes of lavender bitter
15ml UHT egg white
Dry shake first, shake again with ice, double strain into the Wormwood Double Presidente glass and garnish with an edible flower.
