Vegan Ginger Cake – Recipe – Resized -2

240g margarine
300g dark brown sugar
300g golden syrup
200g stem ginger
6g ground nutmeg
7g ground ginger
500g gluten-free flour
10g bicarbonate of soda
10g baking powder
x3 pears (grated)

Vegan Ginger Cake – Recipe – Resized -3


  1. Preheat the oven to 160 degrees Celsius.
  2. Cream together the margarine, sugar, ginger, golden syrup, nutmeg and grated pears in a large mixing bowl.
  3. Carefully fold in the flour, baking powder and bicarbonate of soda and mix well.
  4. Pour the mixture into a cake tin and bake for 15 minutes.
  5. Enjoy! (We even added leftover gingerbread snowmen to ours for decoration!)
