Ingredients
240g margarine
300g dark brown sugar
300g golden syrup
200g stem ginger
6g ground nutmeg
7g ground ginger
500g gluten-free flour
10g bicarbonate of soda
10g baking powder
x3 pears (grated)
Method
Preheat the oven to 160 degrees Celsius.
Cream together the margarine, sugar, ginger, golden syrup, nutmeg and grated pears in a large mixing bowl.
Carefully fold in the flour, baking powder and bicarbonate of soda and mix well.
Pour the mixture into a cake tin and bake for 15 minutes.
Enjoy! (We even added leftover gingerbread snowmen to ours for decoration!)
