American-style pancakes

(makes 8 pancakes)

Ingredients

100g flour
5g baking powder
225ml milk
Egg whites from 3 eggs (90g)
Egg yolk from 3 eggs (60g)

Method

  1. Mix together the flour and baking powder, then stir in the milk and egg yolk until smooth.
  2. In a separate bowl, whisk the egg whites until stiff.
  3. Fold in a third of the egg whites to the wet mixture and then fold in the rest.
  4. Pour the mixture into a shallow pan and cover with a lid. Cook for 5-6 minutes, then flip and cook until golden on the bottom.
  5. Serve with a berry compote or maple syrup.

Crepes

(makes 6 crepes)

Ingredients

32g butter
150g flour
330ml milk
1 whole egg

Method

  1. Melt the butter until liquid.
  2. Mix the flour, milk and egg until smooth, then pour in the melted butter.
  3. Using a non-stick frying pan (20cm), pour one ladle of the pancake mix so it covers the base of the pan and cook until the top is dry.
  4. Flip the crepe and cook for another two minutes.
  5. Serve with toppings of your choice!
