The tradition of feasting in December stretches back millennia, long before Christian celebrations. The Romans marked the season with lavish winter festivals. While roast meats have always anchored these gatherings, the centrepiece has evolved dramatically over time. Medieval tables featured boar, pheasant, even roast swan or peacock. The British favoured goose for centuries, a tradition said to have begun with Elizabeth I in 1588, who celebrated the defeat of the Spanish Armada with the bird. Turkey's rise to prominence came much later, championed by Edward VII, though it didn't become a staple on British tables until the 1950s.
