Mexican-Inspired Cocktail

Celebrate good weather and easy company with a cocktail you can make at home. Created by The Bar team at The Athenaeum Hotel, this Mexican-inspired serve is fresh and relaxed, finished with a gentle warmth that lingers.

Ingredients

  • 50 ml gin infused with chilli and lime
  • 20 ml agave syrup
  • 10 ml freshly squeezed lime juice
  • A thin slice of fresh ginger
  • A small handful of fresh mint leaves
  • Generous ice cubes
  • Sparkling lime soda to finish

Method

  1. Place the ginger slice into a tall glass and score it with a criss-cross pattern.

  2. Muddle the ginger gently to release its warmth, then add the mint leaves and muddle once more.

  3. Add the gin, agave syrup and lime juice.

  4. Shake the mixture lightly and strain into a chilled glass filled with ice.

  5. Top up with sparkling lime soda.

  6. Finish with a sprig of mint and a slice of ginger, then enjoy.

This drink is bright, refreshing and just a little spicy, a perfect companion for long evenings or relaxed afternoons at home.
